Light Veg-Mayonaise
This is a good alternative for those who want to reduce the amount of oil used to make a veg-mayonaise.
I like it so much, it doesn’t take much time and my husband likes it too!!!
Ingredients:
150 gr. potatoes boiled and peeled
2 tablespoons sunflower oil
2 tablespoons soy yogurt natural
60 ml of soy milk
salt to taste
2-3 tablespoons cider vinegar
2-3 tablespoons lemon juice
1 pinch of turmeric (optional … if you want a nice yellow colour)
Method:
Blend the potatoes with milk, oil, yogurt, a pinch of salt and a pinch of turmeric, if you are using it. Blend until you get a smoothand creamy consistency. Add lemon and vinegar to your taste and blend.
Pour this mayonaise in a glass jar and store it in the fridge for a few hours. It will thicken a bit more and it will be nicer. When I make this, it doens’t stay long in the fridge. Enjoy!
