Bulghur Salad

3 cups of chopped romaine lettuce
1/2 cup sliced mushrooms
1/2 cup radishes, sliced
1/2 cup English cucumber, sliced
1 carrot, julienned
1/2 cup bulghur, softened
2 Tbsp olive oil
1 1/2 Tbsp lemon juice
1/2 tsp salt
1/2 tsp black pepper

In a small bowl, add 1/2 cup of bulghur and 1 cup of water and let soak for 30 minutes. (There is the option of cooking the bulghur, but since this is a cold salad I did not do this). Toss the salad with the dressing and serve immediately.
