Vegan Eggs with Spinach
These look like real eggs! they are amazing! The yolk is made with just pumpkin, believe it or not! 🙂
Ingredients for 5 eggs:
A bowl of boiled spinach
5 yolk-size balls of pumpkin (scooped out with a spoon)
5 slices of pumpkin
1 / 2 cup white vegan sauce (it should be thick)
1 tablespoon natural soy yogurt
1 tablespoon soy creamer
extra-virgin olive oil
1 tablespoon finely chopped onion
salt
pepper
ginger
a pinch of mustard
Method:
Steam the pumpkin yolks and slices, with a little salt on it.
In a shallow pan cook the onion with a little water then add a little olive oil, add the spinach, flavour with ginger and pepper, salt and sauté on a high flame for a few minutes.
Arrange on a baking tray the pumpkin slices, some white vegan sauce and the spinach.
To make the egg whites: take the white sauce and add the soy yogurt, the soy creamer, a pinch of mustard and a pinch of salt. Pour this white sauce over the spinach. Now add the fake egg yolk, doesn’t it look amazing? Sprinkle a little pepper.
Grill on a high temp. for 20 minutes. This doesn’t taste like eggs of course but it surely has a unique combination of flavours, enjoy!

We are oldstyle cooks here in Italy. I’m quite sure she used fresh pumpkin, and the result is impressive, I agree! 🙂
