Curry and pineapple rice
Ingredients:
500 gr pineapple
3-4 tbs soy yogurt
1 onion
1 clove of garlic
salt
curry powder
pepper
oil
Directions:
Chop finely the onion and slowly fry it with garlic, add curry powder (I usually add a generous amount) salt, pepper and mix over low heat for 8-10 minutes.
Add yogurt, mix properly and add chopped ananas. Cook other 10 minutes and serve it with rice.
Best rice qualities for this dish are thai or basmati, I had none of them so I used some ordinary organic rice.
