Penne with Asparagus
Ingredients:
Penne Pasta
Asparagus
Tomato sauce or peeled tomatoes
Turmeric
Onion
Laurel
Chili
Extra virgin olive oil
Vegan Parmisan Cheese
Method:
The process is very simple of course. Sautè the onion, olive oil, bay leaf and a pinch of pepper. Add the asparagus, cut into slices and leaving the tips at the end. Simmer and add tomato sauce and a teaspoon of turmeric dissolved in a bit ‘of water. Cook your pasta in salty water, drain and add to your pan with the sauce. Cook a further 2 minutes, turn off the heat, add your vegan parmesan cheese and enjoy 🙂
I love asparagus, never tried it with tomato sauce though…
