Avocado and Pepper Balls
Ingredients:
1 avocado
1 red bell pepper
1 onion
cumin
mint
paprika
chickpea flour
cous cous
sesame seeds
poppy seeds
pine nuts
almonds
Method:
Put the pepper in the oven for half an hour at 180 degrees (medium hot)until completely black on the surface. Let it cool and peel it with your fingers.
Cook the couscous as written in the box
Put the pepper, the onion and the avocado in a blender and process until smooth.
Add to the couscous and mix with a wooden spoon until combined. Gradually stir in mint, paprika, cumin and chick pea flour until the mixture holds together. Form into balls or other shapes you like. Garnish with sesame seeds, poppy seeds, pine nuts and almonds.
You can eat them like this or you can fry them until golden brown. Enjoy 🙂
