Mediterranean Pie
I had this idea after noticing I only had broccoli, dried tomatoes and olives in the fridge … it’s simple but really delicious!
Ingredients:
250 gr. flour 0
30 gr. starch
6 tablespoons sunflower oil
mix equal parts water and white wine
1 / 2 teaspoon baking powder
salt
For the filling:
A nice plate of steamed broccoli
1 / 2 chopped onion
dried tomatoes
black olives baked
soy sauce
parsley
chilli
Olive Oil
Method:
In a pan cook the onion with a little water when it is softened, add a drizzle of extra virgin olive oil, parsley and crushed chillis. Fry a little. Add the chopped dried tomatoes and pitted black olives. Cook for a few minutes and then add the steamed broccoli.
Add soy sauce to taste. Stir and set aside.
Prepare the pastry, mix all ingredients.
Roll out the dough and make two layers the shape of your tin. Place the first layer and fill in with your mediterreanean stuffing, place top layer making little holes with a fork, seal edges and bake at 180 ° C for 35 min.

I litterally love broccoli, especially with chilli and olive oil but I never tried it with dried tomatoes….
