Black Almond Cake
I first made this cake without the cocoa powder and coffee powder, it wasn’t too bad but something was missing. Now with cocoa powder and coffe powder, it’s very similar to our typical black cake (northern italy)
Pastry ingredients:
for a small round tin (diameter 20 cm)
White flour 100 gr.
Whole wheat flour 100 gr.
40 gr. oil
90 gr. mascobado brown sugar
grated rind of one lemon
Enough water to form a dough
For the almond and cocoa cream:
400 gr. Almonds
a carton of soya cream (250 ml.)
6 tablespoons cocoa powder
4 tablespoons coffee powder
200 gr. mascobado brown sugar
a shot of Amaretto di Saronno liqueur (optional)
Method:
Prepare the pastry by mixing all dry ingredients and add oil. Mix well then add some water to form a dough. Set aside in refrigerator.
Prepare the cream by puttin in a food processor the almonds and sugar, mix for about a minute. Meanwhile add soya cream and then immediately afetr cocoa powder and coffee powder, blend well, here you can add the amaretto liqueur.
Lining your cake tin with a thin layer of pastry, pour the cream. Level with a spoon and bake at 180 degrees for 45 minutes.
Wait for it to cool well before cutting!
