Oriental style salad
Here I am with my first recipe… It’s a fairly simple salad but it makes a really delicious lunch!
Salad ingredients
salad greens
4-5 leaves of chinese cabbage
2 small carrots
a handful of blanched soy sprouts
fresh coriander (or parsley)
lemongrass (fresh if possible)
sunflower seeds
a small slice of seitan
seame oil
soy sauce
Dressing ingredients
1 teaspoon vegetable oil (I used peanut oil)
1 teaspoon sesame oil
1 teaspoon lemon juice
1 teaspoon rice vinegar
½ teaspoon ginger powder
salt
Method
First of all cook the seitan. In this case I had a chunk of grilled seitan at hand (leftover from a barbecue!), but normally I would cut the seitan in slices or small chunks, stir-fry it in a wok or non-stick pan well coated with hot sesame oil, and in the end add a generous dash of soy sauce, it should almost glaze.
Then the salad: make a bed of salad greens. Shred the cabbage, grate the carrots, chop up coriander or parsley and the lemongrass, and mix it all adding sunflower seed and soy sprouts (I didn’t have any sprouts but they do make a nice addition to this salad). Lay the mix on the bed of greens. If you don’t have fresh lemongrass, dried lemongrass will do, but in that case I suggest adding it to the dressing and letting it stay for a while (even better, grind it up before adding it the to dressing).
Then, prepare the dressing by mixing all ingredients together. Dress the salad and add the seitan. Since this was my lunch box, I let the seitan cool down completely before adding it to the salad, and kept the dressing separate using the little jar you can see in the photo, but you could also serve it lukewarm. Beware, the dressing quantity is a little on the low side, I’m not a huge fan of greasy salads but this was especially light . Feel free to double the dose!
