Veg Croquettes


Nothing’s easier! 🙂
My husband liked this so much, I am going to make some more…

3 medium potatoes
1 carrot
½ cup frozen peas
chopped onion
a small courgette
Olive oil
soy sauce
1 tablespoon nutritional yeast flakes
puffed rice (breakfast rice is fine)


Wash and peel potatoes and cut into quarters. Arrange them in a steaming basket and cook.
Wash the vegetables and cut carrots and zucchini into this strips.
Then put onion, carrot, zucchini and peas in a pan, pour a little oil, sprinkle with nutmeg, parsley, pepper, a pinch of salt and sauté on a medium heat. Adda little soy sauce and simmer a little longer. When cooked and no water is left at the bottom of the pan add the chopped basil.
With a potato masher mash  potatoes draining eccess water, they should be relatively dry.
Mix it with your vegetables and nutritional yeast flakes and form little flat balls with your hands.
Pass the puffed rice to the mixer, two seconds so that is not reduced into flour but still has visible grains.
Prepare a thin batter of flour and water.
Then pass the balls in the batter and then in the puffed rice. Fry in a little oil a few minutes per side.
They are scrumptious: D

    Croquetes, as well as patties, rissoles, loafs…are always welcome! Virtually they could taste infinite different ways, that’s why we love them 🙂
