Zucchini Quiche
Ingredients:
Quiche pastry (I used this awesome recipe by Nicoletta)
2 large zucchini, cut in rounds
1 finely chopped shallot
1 tablespoon extra-virgin olive oil
1 pack soy cream
2 tablespoons nutritional yeast
Salt
Pepper
Curry powder
Method
In a large skillet stir fry shallot and zucchini with the oil. Season the cream with nutritional yeast, salt, pepper and as much curry as you like. Pre-heat the oven at 180°. Spread the pastry in a oil quiche dish, place the zucchini on the pastry and cover with the cream. Cook for 45 minutes or until the filling is set. Let cool down a little before serving, it is also delicious when served cold!
this quiche looks so yummy!!!
just made it, delicious!! Added some spinach and vegan parmesan cheese (with almonds) on top. I love it!
