Leftovers’ Bread Roll
Ingredients for the dough:
2 tablespoons olive oil
290 ml lukewarm water
1 tablespoon salt
1 teaspoon sugar
480 gr flour
1 / 2 cube fresh yeast
Ingredients for the filling:
leftovers of: grilled eggplant in olive oil with garlic and parsley, peppers in oil with garlic
Method:
Prepare your dough like you usually do, let it rise and then roll it out. Make sure it’s thin, about half cm.
Spread with your leftover vegetables and roll it up into a nice log. Let stand in a warm place.
Bake it covered with kitchen foil at 200 ° C for 45-50 minutes.
