Lentil potato cakes
I got this idea from Yu’s stuffed potato cakes with peas, they were really beautiful, but I love lentils so much that I’ve tried this variation.
Ingredients (for about 10 cakes):
4 big potatoes
150 gr boiled lentils
1 onion
curry, salt, hot chili pepper
flour
extra-virgin olive oil
Method:
Boil or steam the potatoes. Smash them with a fork and season with salt and oil. Shape the potatoes in patties not larger than the palm of your hand and sprinkle with flour. Let them stay for a while to firm the potatoes up, this way they will hold together really well.
Now the stuffing: brown the onions in a little oil with curry and chili peppers, add the lentils and stew for a while. Cool down and then take a potato disk, add some lentils, cover with another disk and seal them together. Then cover with flour and cook in oil a few minutes per side until gold and crispy. You will probably have plenty of leftover stuffing, you can serve it as a side dish!
