Raw Tomato Patties
Ideal to dip in a raw zucchini and lemon sauce, these are a real treat.
Ingredients:
a tbsp flaxseeds
3 tbsp sunflower seeds
5 almonds
1 tablespoon tahini (optional)
6 sundried tomatoes (soaked)
Method:
Grind all the seeds in a food processor or coffee grinder. If you don’t like the texture of flaxseeds, grind those first until you have a powder then add other seeds and grind. Add tahini and drained tomatoes, blend thoroughly. Shape the patties with your hands and place on a serving dish on top of some salad leaves. Dip in a nice sauce of your choice.
