Okara Hummus
This recipe is great when you have lots of leftover okara from your homemade soy milk.
Ingredients:
4 tablespoons of okara
1 tablespoon tahini
juice of ½ lemon
2 tablespoons extra virgin olive oil
½ garlic clove, crushed
1 piece of dry red chilli
1 tablespoon chopped parsley
1 pinch of salt
Method:
Easy!
Mix everything together, blend and put the cream in a bowl, covering it with some more olive oil and garnish with chopped parsley.
Put in refrigerator to rest for at least a couple of hours.
It’s great spread on bread or toast with some grated grated garlic.

I have Okara coming out of my ears and can’t wait to try this!
I’ve made hummous with chickpeas and okara before, but never with just okara and tahini.

this is pretty interesting. replacing the chickpeas with okara… i can’t imagine what this would taste like. i’ll try it.
