Gelo di Mellone


gelomellone01This is a kind of watermelon jelly, typical fresh pudding from Sicily, Italy.  Enjoy it in a nice hot sunny afternoon 🙂

1 l watermelon juice
100 gr. sugar cane
80 gr. cornstarch

Preparation time: 40 minutes (plus time in refrigerator)

Peel and cut the watermelon, remove all seeds and blend the pulp. Strain the mixture to separate the juice.  Melt sugar in a little juice and cornstarch leaving no lumps.  Add the remaining juice, a sprinkling of cinnamon and place on a low heat, keep stirring.  Turn off as soon as it begins to boil.
Now, pour the jelly into the molds or cups and place in refrigerator to cool and solidify.  Wait several hours.
Serve with a sprinkle of cinnamon or as it is.
