Ratatouille with Tofu

I opened the fridge and all I could see was bell peppers!  I had to use them up because I am going away this weekend 🙂

Ingredients:
half yellow pepper
half red pepper
180 gr. tomatoes
onion
2 cloves garlic
mix of herbs: parsley, sage
black pepper
180 gr. tofu
extra virgin olive oil

Method:
Cut the tofu about 1 inch thick and cook in a pan until golden brown. Sprinkle with pepper and set aside in a warm place.
Chop onions, garlic and peppers and fry in a little oil for 7/8 minutes with lid on.
Then add your herbs and the tofu and cook for a further 10 minutes.
I served it garnished with sage leaves.
