Hazel-nuts “pesto”
This is a delicious pesto, very good if used as seasoning for pasta or simply spreaded on bread…
Ingredients:
toasted hazel-nuts 100 g
peeled almonds 50 g
a pinch of salt
vegetable stock (required amount)
olive oil (required amount)
a pinch of black ground pepper
Method:
Blend the toasted hazel-nuts and the peeled almonds (using an immersion blender) with salt and pepper and pour some cold vegetable stock and olive oil, enough to attain a creamy consistence (not liquid). Pour the pesto in a glass jar and cover it with more olive oil. Store it in the fridge.
