Aubergines from Sardinia

This is typical of Sardinia (Italy).

Ingredients:
Eggplant
Oil for frying
Garlic
Tomato sauce
Parsley
Oregano
Salt
Tomatoes
Breadcrumbs
Capers

Method:

Wash and cut the eggplants lengthwise, with the help of a spoon eliminate the pulp. Fry in hot oil both boats and pulp. In a bowl mix the other ingredients: breadcrumbs, chopped tomatoes, parsley, oil, salt and a pinch of pepper if you like, minced garlic, oregano, capers and the pulp of the fried eggplant.  Add a little tomanto sauce to mix everything well … but little eh! With this mixture fill the boats … Bake for about twenty minutes at 180 °
