Courgettes au Gratin


For this recipe I used the courgettes in my kitchen garden!

3 medium potatoes
2 medium zucchini
1 tablespoon wheat germ
Real Vegan Parmisan Cheese
Fresh parsley
a piece of leek

Wash the vegetables,  boil the potatoes in water with their skins.  Chop zucchini with parsley and leek and mix together. Once cooked peel potatoes and chop them up roughly.  Layer in a baking pan and finish off with real vegan parmesan cheese and then sprinkle with a tablespoon of wheat germ, it makes it brown and crisp! Bake at 150/180 degrees for 30 minutes, or until the courgettes are cooked.
