Soy nuggets with courgettes

Soy nuggets are a really yummy and nutritiuos food!

We tried them out in a lot of ways.

(serves 4)
– 250 gr soy nuggets
– 300 gr courgettes
– onion, carrot, celery to taste
– extra virgin olive oil
– salt
– gomasio
– sesame seeds
– sunflower seeds

Boil soy nuggets in some lighlty salted water. Drain them and let them rest in a colander.
Chop onion, carrot and celery, scald them in a no-stick pan with a bit of water. Add some olive oil after the first minute of cooking, stir with a pinch of salt, not allowing the oil to fry.

Put the courgettes, roughly chopped, in the pan; add some water and place the lid over the pan. Do not overcook the courgettes: they shouldn’t lose their bright green colour. They are visually more inviting and don’t lose their nutriments.

Should soy nuggets be still too drenched, just wring them with a wooden spoon, pressing them against the holes of the colander; pour the nuggets, once perfectly drained, in the pan .

Combine courgettes and soy nuggets, stirring well. You may want to add black pepper or gomasio to taste.
