Courgettes carrots & ginger spaghetti
Hi there! This afternoon I’ve got a little bit of time for myself, therefore I’ve pleasure posting a recipe I did a little while ago…still in season, though!
Ingredients:
(serves 2)
– 180 gr spaghetti
– 2 salad onions
– 2 spoonfuls of minced celery
– 1 big courgette
– 1 big carrot
– 1 spoonful of fresh ginger
– 1 spoonful of coriander
– nutritional yeast flakes (to taste)
– pepper (to taste)
– extra virgin olive oil
Method:
In a pan big enough to contain the pasta just before serving, brown celery, salad onions, ginger and coriander in some oil: don’t let them get too brown.
In a pot, put some water to boil for the pasta.
In the pan, put the courgette and the carrot, finely chopped, and let them cook for about 10-15 min. Put a lid over the pan, so that the vegetables cook with their own steam; you may want to add some water from the pasta pot, should you find the mixture too “dry”.
When the vegetables are done, pour spaghetti in the same pan, stir to let the misture get creamy, adding a drizzle of olive oil.
Sprinkle with pepper and nutritional yeast and serve.
Easy, tasty, fresh…it’s definitely for me 🙂
