Sangria Muffins


I do love sangria, I like it really much. In the last twenty days I’ve been preparing and drinking  a lot of it. Last Sunday, after a really pleasant Saturday, I wanted to celebrate on my own, and nothing’s better than cooking! I’ve reused some fruit from sangria.



(makes 12 muffins)

– 160 gr flour

– 50gr sugar

– 4 spoonfuls of coconut flour

– 1 glass of soy milk

– 4 spoonfuls of oil

– baking powder

– 8 spoonfuls of fruit


Sieve the flour and the baking powder. Add the sugar and the coconut. Add oil and soy milk until the mixture gets sticky and not too liquid. Add the fruit,  pour the mixture into the moulds and put them in the oven. Let them cook for 40min, 160°.

My father gobble them up…that definitely means they were delicious!
