Carrot ice cream


I had to try it out, definetely! I “dreamt” of it, I’d say. Some evenings before the “dream” I was desperate for a sweet treat after dinner, but I didn’t have anything sweet (I don’t have anything on purpose :-P). I saw some carrots in the fridge and I sort of mixed them with some sugar…well, it wasn’t too bad after all! Pretty convinced by the “promising” flavour, I must have dreamt this carrot ice cream…
– 400 gr carrots, chopped
– 4 handfuls of sushi rice (or whatever, but it has to cook until very very tender)
– sugar (to taste)
– 3 cardamom berry (just the small bits inside, discard the green “shell”)
– 3 cloves
– 2 spoonfuls of fresh grated ginger
– 1 spoon of lemon juice
In a pot, boil the carrots with rice, cardamom, cloves and sugar. Let it cook very well, until carrots are very well done and the rice is almost pulped. Take the cloves out. You should expect the mixture to be similar to a risotto, not too liquid I mean.

Process it with a hand blender until the mixture is reduced to a pureé. Add ginger and, if you wish, some lemon juice. Put the mixture in the freezer overnight, or as long as you want to achieve the consistency you prefer.

It has a fairly peculiar taste! The carrot gives it a rich texture, or maybe it’s due to the rice. Next time I’ll try adding some ground almonds to the mixture juts before putting it into the freezer, or maybe adding them on top of the ice cream just before serving.

    I’ve been there last time a looong time ago, going to South France I guess. I’d like to visit Genoa again (you know, I’m a great De Andrè’s fan 🙂 )…well, next time I come maybe I’ll let you know :-). Do you ever happen to visit London, by the way?
