“Pittule” with zucchini flowers
These “pittule” were really fabulous!
Ingredients:
– some courgette flowers
– allpurpose flour
– water
– salt
– brewer’s yeast
– parsley
– onion
– pepper
Method:
To prepare the batter, combine flour with water, salt and yeast. The dough you obtain should be elastic and not liquid , so that it will absorb a smaller quantity of oil when you later fry it. Let it rest for about a hour, until it starts rising. Now, add zucchini flowers, minced onion, pepper and parsley, and leave it rest for about 30 min. With the help of a spoon, pour the mixture in small quantities in piping hot oil , until the “pittule” get golden brown. And that’s all!
