Stuffed Peppers with Rice
Last day I woke up desiring to have stuffed peppers…and this happens to me more than once a week…as they are definitely my favourite dish! There’s plenty of variations, but I’ve always prepared them as follows…This is my super easy recipe.
Ingredients:
– yellow, red, green capsicums (one per person)
– bread
– parsley
– garlic
– capers
– extra virgin olive oil
– rice
Method:
Wash capsicums and cut out their tops to form the hole to fill them. Mince garlic and parsley, in the meanwhile cook the rice. When done and a little cooled, combine all the ingredients with some olive oil. Fill the peppers with this rice-based mixture and “close” them with some bread bits.
Put capsicums in the hot oven for about 1 hour, turning them quite often.
And here it is my favourite dish!
