Curry Paste
Did it ever happen to you to have to use curry paste in a recipe you were preparing? I think that, in this occasions, you do what I do: that is to use the ones you find at the super, half full of unkwnon ingredients. This is why I wanted to prepare my own curry paste, and I have to say it’s delicious and you really taste the flavour of every single ingredient but at the meantime you appreciate how well the cobine together…
Ingredients:
– 5 garlic cloves
– 2 tbsp of ginger
– 1 thai chili
– 2 tbsp of grounf cumin
– 2 tbsp of minced coriander
– 1 tbsp turmeric
– 1 tbsp of garam masala (here is how I made it)
— 1 tbsp of paprika
– oil to blend everything smoothly (in theory you should use a seeds oil, as flax seed, or sunflower seeds or whatever..but my boyfriend makes a delicious tuscan olive oil, directly from the siennese contryside…I mean, I couldn’t help using it! :-P)
Method:
In a small food processor, blend all the ingredients together. And that’s all!
You can use it in a lot of dishes, is basically a way to give more flavour to some dishes, particularly for oriental ones (i.e. thai). It’s also good (but be careful…just half a tea spoon!) in soups, or with vegetables, tofu, seitan…Try it! Store it in a fridge for at least one week, in the frezer at one month.
