Focaccia with Vegetables
I make focaccia at least once a week; with a nice salad and some vegetables it’s perfect for lunch, then it’s quick to do and while the dough leavens you have time to do something else!
Ingredients:
– 300 gr flour (in this case 200gr wholewheat and 100gr type 00)
– yeast (I used the dried one, 1/2 sacket), melted in warm water + 1tsp malt
– salt
– extra virgin olive oil
– vegetables you prefer (here tomatoes, zucchinis and capsicum + some olives)
– oregano
Method:
Very easy…melt the yeast and let it rest for 10 min. Meanwhile, sieve the flours and add oil, yeast and knead it for at least 10 min. Add salt and carry on kneading.
Let it rest for about 1 hour into the warm, then roll out the dough in a baking sheet, sprinkled with olive oil. Let it rest for 30 min. Now, add vegetables.Let it rest a little bit again, add oregano, a drizzle of olive oil and salt; put it in the oven for 20min, 220°.
O God…I want a slice of it. NOW!!
