Mint&Almonds Risotto

A quick and fragrant risotto!


Ingredients:
(serves 1)
– 100gr rice
– a few tablespoons of tomato sauce
– 1/2 onion
– oil
– salt
– pepper
– paprika
– curry
– vegetable broth
– dried mint
– chopped almonds
Method:
Brown the onion in a little of oil, then add rice, tomato sauce and a bit of broth. Season with salt and pepper, add curry and paprika. Stir and add the broth whenever the rice is too dry. Shortly before the end of cooking of rice, add mint and almonds.
