Grapefruit Mousse


(serves 6)
juice of 4 pink grapefruits
300 gr of soy cream
1 teaspoon of agar agar
200 gr of cane sugar (of course, it depends on how sweet you want it)

I squeezed the grapefruits. In a small amount of juice I dissolved the agar agar, then I added the rest of the juice and I made it boil with the sugar for 5 min. Then I waited for it to cool, I added the cream and mixed everything. I poured the mixture in the molds which I then put in the fridge. After three hours you can remove the mousse from the molds (if the “operation” is difficult, just use a knife and pass it alon the edges of the mold); decorate them with a sprig of red currants and serve. They are refreshing and suitable for a summer dinner 🙂
