Rustic Hazelnuts Cookies


I was feeling like having come rustic and delicious cookies, so I preparesd these mouthwatering biscotti, great for breakfast or as a snack.

– 140gr all purpose flour
– 100gr buckwheat flour
– 10gr of potato starch
– 50gr hazelnuts, coarsely chopped
– 80gr sugar cane
– 2 teaspoons cream of tartar sifted
– 1 pinch of salt
– 125gr of soy butter
– 3 tablespoons soy milk
Mix the two flours with starch, hazelnuts, sugar, cream of tartar and salt, add butter and soy milk, and mix to obtain a “ball”, which you will put in the fridge to rest for at least 30 minutes.
Take the ball out of the fridge, and gradually picking pieces of dough, compact and press them with your hands. Place them on a chopping board and cut with a mould (I have used little heart-shaped one). I preferred to use this method rather than the classic preparation of dough with a rolling pin, just because I wanted my cookies to be beautiful thick and uneven!
Bake in a hot oven at 180 degrees for about 15 minutes, until they get golden, then remove from the oven. Let them cool on a grill…and enjoy them for breakfast or as a snack!
