Cardamom Biscuits
This is the recipe I use for the short pastry.
Generally I make it with spelt flour and potato starch only, but in this case I didn’t have enough of both, and I used a bit of everything! If you prefer you may use sugar only, but I’m using every time a little less, so that I slowly get used to use malt instead…
Ingredients:
– 200 g wholemeal spelt flour
– 65 g starch
– 50 g wholemeal flour
– 30 g rice flour
– 30 g oatmeal
– 80 g sugar cane
– 80 g oil
– 1 tablespoon yogurt
– 1 tablespoon malt
– salt
– 1 teaspoon baking soda
– 1 teaspoon cardamom
– hot water as needed
Method:
Mix thoroughly all the dry ingredients and add oil. Start “rubbing” the dough, so that the flour absorbs well all the oil: this is the most important step to get a good result … continue to rub and add the remaining ingredients.
Roll out the dough, cut the biscuits and bake at 180 degrees for 12 minutes.
(I mix in the middle I put bits of dark chocolate!)

This is interesting! Never tried to put cardamom in biscuits… they must be special
