Mulligatanwy Soup


Sorry to disappoint all those who thought that this was a huge bowl of melted chocolate with a lovely coconut flakes, you should now appease the taste buds … this is actually a soup with an unpronounceable name, Indian at a guess. I found many variations of this soup, but this seems to be quite original. Actually, the original version includes some cruel ingredients, but it has been easy to make cruelty-free 🙂

– water or vegetable broth
– 1 can of black beans
– 1 onion
– 1/2 carrot
– 1 celery stalk
– coconut water (hard to get by the opening of a coconut)
– half coconut
– 2 tablespoons tomato paste
– 1 tablespoon grated ginger
– 1 tablespoon curry paste
– 1 tablespoon lime juice
– salt
– pepper

Sauté celery, carrots and onions, finely chopped. Once they are done, add tomato paste, ginger, curry paste, coconut milk and half coconut, cut into small pieces (but leave a little of it to grate at the end); also add water or broth, quantity varies depending on how thick you want the soup, mine was almost a pureè … Cook until it boils and add the beans. Cook another couple of minutes and then blend it all with the hand blender. Let cool a bit and serve with a sprinkle of pepper, nutmeg and grated coconut. It ‘very good and fresh, despite the beans!

    Yes, it was pretty good, to be honest! And the texture was soooooooooo smooth…almost velvet!
