Soft Peach Tart

I saw this Chicca’s Apple Tart , and I felt like making one! I modified a little bit the ingredients, and I used peaches instead of apples.

– 200 gr flour (I’ve used half whole wheat flour and half starch)
– 60 gr oil
– 100 gr whole cane sugar (I used a little less and I put 1 tablespoon of fructose, I’ve got it and I just wanted to finish it up … I thought that fructose wasn’t that bad as a sweetener, but I’m no longer so sure! Can someone give me some information?)
– 200 gr plain yogurt (even better if homemade!)
– 1 sacket baking powder
– 1 or 2 peaches
– pinch salt
– jam & almonds for garnish

Combine oil, sugar and yogurt. Beat well and add flour, sifted with baking powder. Stir with a wooden spoon, patting the dough to the inside to incorporate air (when you are finished you will see funny bubbles in the dough).
Pour the mixture in a greased and floured baking pan, and arrange sliced peaches (I also added a few almonds and 2 tablespoons of berries jam ). Bake at 180 degrees for 30 minutes. Eat!
