Mint & Green Beans Pesto


The real genoese pesto, you know, requires potatoes and green beans, along with the well known basil-based sauce.
In this version I used green beans combined with mint and basil, and voilà! It’s excellent also on hot toasted bread and “bruschetta”!! Dried tomatoes give a complementary hint of colour, which invigortes the dish and those who eat it!

– 300gr approx of green beans
– 10 mint leaves
– 10 basil leaves
– half a clove of garlic (if you like it)
– oil (I used half seeds oil and half extra virgin olive oil)
– salt (in the water for boiling green beans or added later if steam-cooked)

After having cooked the green beans, combine all the ingredients together. You may use it for pasta, cereals, toasted bread or as a creamy side dish with seitan, adding sundried tomatoes roughly cut with scissors.
