Bananas Pain Perdu
This has always been my favorite dessert, and French baguette is too big for a single person. Therefore, I gladly use the leftover and stale bread (vegan saying: “old bread makes good pain perdu”) to churn out the breakfast! This recipe is for a small cake pan!
Ingredients:
– 10/12 slices of stale bread
– 2 bananas
– 2 or 3 tablespoons of brown sugar
– 1/2 litre of soy milk
– one packet of vanillin or grated vanilla
Method:
In a bowl, reduce to a mush the two bananas, slowly adding soy milk to make a pap. Add sugar, mix well and then add vanilla. Soak the slices of bread in this liquid and let them soften for a couple of minutes. Gently lay the soaked bread, without breaking it, in a ceramic baking sheet and then cover it with the liquid from the bowl.
Bake at 180° for 30min, until the bread gets brown. Let it rest for a while and then serve, decorating with slices of bananas, coconut flakes, grated chocolate or cinnamon to taste!
