Big Peanuts Cookies
Just came out from the oven! This is a recipe my sister invented, she’s the expert of biscuits! We make them often, you can replace the peanuts with a little of all nuts,should you wish, I’ve tried them with hazelnuts and they were excellent!
Ingredients:
75gr peanuts (unsalted), chopped
75gr oat flakes
210gr flour
60gr corn oil
80gr brown sugar + 1 tablespoon malt
vanilla, salt
1 teaspoon baking soda + vinegar
hot water as needed
Method:
Chop peanuts and mix them with dry ingredients; then add oil and malt, “rubbing” the dough with your fingers; finally add water. It’s not necessary to rollthe dough: just take pieces, the more or less equal in size, and form small balls; then, flatten them with your hands. Bake at 180 degrees for 15 minutes. Today I’ve also covered them with some malt dissolved in a tablespoon of sugar, spread on the cookies and sprinkled with chopped peanuts.
