Pesto No. 2


Here it is the second recipe for pesto that I found in the magazine that I usually read!

(serves 4/6)
– 4 shallots
– 2 full tablespoons of almonds
– 1 bunch of sage (from my neighbour’s plant!)
– 1 tablespoon of poppy seeds
– e.v.o. oil

Finely slice the shallots and let them brown on a low-medium heat with a tablespoon of oil, adding a dash of water if too dry. When the shallots get goden, turn the fire off, add the sage leaves and cover the saucepan with a lid. In blender put poppy seeds and almonds, blending to get them chopped fairly fine, but without overheating the mixture and squeezing out the oil from the almonds. Now, add shallots and sage, blend again, adding water as needed to obtain a creamy and smooth sauce
I’ve dressed pasta (one serving), I’ve put two other portions in the freezer, while my mum used the fourth portion to dress a couscous with chickpeas and a wholegrain rice with red lentils 😀
The flavour is unique … of course you must like the sage

    I know pesto but not with sage it’s a good idea to try something different …

    Never done pesto with sage but I’ve got a neighbor’s plant … it’s a strange plant : at home it doesn’t grow up, but on the balcony of someone else it is luxuriant … I can’t explain this 🙁 😆
