Samosas
Ingredients:
(for the dough)
200gr of all purpose flour
2 tablespoons extra virgin olive oil
1 / 2 teaspoon turmeric
1 / 2 teaspoon salt
water as necessary
(for the filling)
250gr potatoes
200 gr of garden peas
2 medium onions
1 clove garlic
1 tablespoon Garam Masala
1 / 2 teaspoon crushed coriander
1 / 2 teaspoon crushed cumin
1 / 4 teaspoon turmeric
1 / 4 teaspoon ginger
1 / 4 teaspoon of paprika
chili q.b.
salt q.b.
extra virgin olive oil
frying oil
Method:
I prepare the dought first and then I let it resto covered; the turmeric is pretty colorful, and it will be nice once fried!
In a wok I brown the onions with crushed garlic, which I’ll later remove, I add potatoes, already boiled underdone and chopped, and garden peas. I sauté them a little while and then I add all the spices, a glass of water and I let it cook for about 15min.
I divide the dough in 12 slices and I roll them with the pasta make, so that I obtain very thin and rectangular strips :-).
Now I compose the samosas by putting a spoonful of filling a the beginning of the strip of the dough, and rolling it up to form a triangle.
The I fry them in frying oil for about 1 minute per side…not light calories at all…but soooo good!!
After that I fry them in vegetable oil about 1 minute per side for nothing … diet … but sooo good 😉
Samosas combine wonderfully well with lime juice, squeezed over the filling, while you’re eating them strictly with your hands!
