Flao de Formentera (frozen)

Thanks to Chicca, Oriental Angel, Vegan Riot and to all of the VeganBlog cheescake-makers! They were essential!
This is a typical dessert of Formentera, based on anise and mint, very good and cool. I made a different version, cold and summery, and vegan of course! A hug to everyone!

Ingredients:
(for the pastry)
300gr vegan cookies
100gr vegan butter
2 tablespoons of soy yogurt
anise seeds (to taste)
(for the filling)
275gr of creamy tofu
80gr sugar cane
1 tablespoons of oat cream (or soy)
2 tablespoons of soy yogurt
1 large bunch fresh sweet  mint

Method:
Blend or chop, as desired, cookies and vegan butter, add yogurt to moisten the dough and spread anise seeds. Then, with a fork, crush the mixture in the baking dish or a cake tin, to create a compact bed. Chill.

Mix all the ingredients of the cream and then place it over the dough!
Put it in the fridge until the tofu is frozen solid (like a pudding).
