Kamut Rolls
Ingredients:
300gr organic kamut flour
10gr of bio wheat “mother dough” (sourdough)
1 tablespoon extra virgin olive oil,
warm water as needed
Method:
Combine flour with mother dough, add oil and slowly add warm water, to create a soft dough, kneading a bit. Let it rise covered with a cloth for 3/4 hours. Then, kneading vigorously the dough on a floured surface, roll the dough with a rolling pin, to a thickness of about 0.5 cm. Create strips, then cut them into pieces; roll on themselves the squares obtained from the cut strips. Press a little onto the finished roll, so that it will stay closed. Place the rolls on baking sheet, lined with oven suitable paper, and brush their surface with water. Bake in hot oven, 200/180 °, for 20-25 minutes; activate, if available, the grill mode (to brown the surface) for the last 5 minutes.

I love them!! I’ve never had the sourdough, I’m somehow attracted and “terryfied” by it, I’ve always thought it requires a lot of care…does anybody know something about it?
