Small Summery Ricotta Domes


A very fresh dish that can also be an excellent main.

(for a dome)
4 tablespoons of soy ricotta
1 -2 tablespoons soy yogurt
few tablespoons of soy cream
dried tomatoes
cherry tomatoes
lemon zest

With a fork, combine ricotta with yogurt and a few spoons of soy cream, if you want to “round off” the taste, plus a pinch of salt.
Place the soft ricotta produced in a mold, lined with cling film and store in the fridge for at least a couple of hours to stabilize the shape.
Rinse and finely chop some tomatoes, dice tomatoes, chop parsley, chive; gather all these ingredients in a bowl and dress them with a little extra virgin olive oil, salt, pepper and lemon zest.
Remove the dome oform the fridge, uptorn it on a plate and remove the film. Sprinkle with a little pepper and arrange seasoned tomatoes around it.

Very simple but very good and fresh!
