Spiced Dome
So …. Here it is another recipe with vegetables from my grandparent’s garden … Oriental version…
Ingredients:
– Boulgour & quinoa mix (purchased already mixed at the organic shop)
– 1 onion
– Garlic
– Zucchini
– Aubergine
– Green capsicums
– Coconut milk
– Extra virgin olive oil
– Curry, turmeric, ginger (fresh or powdered, I personally prefer the fresh one), cardamom seeds, tekka (miso and roots based sauce), shiso leaves powder, pepper and so on and so forth!
– Salt
Method:
Put some e.v.o. oil in a saucepan, add the onion, coarsely chopped, and minced garlic.
Add zucchini cut into thick slices, diced aubergines (don’t cut them in pieces too small) and green pepper, sliced.
For cooking, instead of water or broth, use coconut milk only; season with your favorite spices and simmer for about half an hour.
Cook the mix of quinoa and boulgour; once done serve it, using a mold, together with the sauce.
Garnish with some basil leaves… and buon appetito to you all
