Citrus-Pistachioed Seitan
a weird name for this wonderfully creamy seitan, made with grapefruit, pistachio butter and soy yogurt. Definitely a treat, which my omnivorous partner absolutely loved …and I did as well 🙂
Ingredients:
300gr seitan, diced
2 grapefruits
1 lemon
4 tablespoons of soy yogurt
1 tablespoon soy sauce
1 clove of garlic
1 teaspoon of cane sugar
1 full tablespoon of pistachio butter
sunflower seeds
Method:
Squeeze the juice of the grapefruits and lemon, and pour it in a saucepan. On a medium heat, combine the juice with sugar, soy sauce and a whole cloves of garlic. Stir continuously, gently, with a wooden ladle. After a while, you will see that the juice will start caramelizing and becoming thick. Now, add seitan, keeping on stirring. Once the seitan is done, add pistachio butter, never stopping stirring. Once this has combined well with the rest of ingredients, add yogurt. Remove th garlic clove. Stir to combine well all the ingredients, garmish with sunflower seeds and and serve. It was sooo good and soooo creamy!!!!

I use sunflower seeds in salads but they are so good!
And this is a nice way to eat seitan different! Bye bye! 😉
