Aubergines “In Carrozza”
Well, you must know, you’ll hardly get light recipes from me! So, to be consistent with what I wrote, here there are aubergines “in carrozza”, created in a summer afternoon last year by me and my husband. They are great, the quantities of ingredients is very much according on how much hungry you are, with these ingredients we prepared 8 “sandwiches”:
Ingredients:
(serves 2)
8 slices of bread (I used the long ones to be halved)
3/4 black aubergines, long and not too large (formerly grilled or fried in slices)
batter,not too thick (flour, preferably of chickpeas, water and salt)
breadcrumbs
oil for frying
Method:
Cut the bread slices in half, lay on the first bread slice the slice of previuosly grilled or fried aubergines (three slices are ok); close with the other slice of bread, pass it all in the batter and then in breadcrumbs. Same procedure for the remaining slices of bread. Fry in hot oil until complete browning. Buon appetito!

Uh!!! this is a vegan delicious version of “mozzarelle in carrozza”!!! absolutely fat and greasy but really yummy 😛
