Quinoa with Celery Mousse

Ingredients:
200 gr quinoa
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
some fresh cheerry tomatoes
for the mousse:
300 gr of tofu
4 tender celery stalks
1 clove garlic
1 sprig of rosemary
15 pitted black olives
2 tablespoons extra virgin olive oil
paprika, turmeric as needed
salt as needed

Method:
Cook the quinoa as per instructions on the package, in lightly salted water. Then add the tbsp of  oil and the tbsp of lemon.
In the meantime, peel the garlic, wash the rosmary and remove the leaves from the stalk, clean and chop the celery and blend them with the other ingredients for the mousse.
Mix well quinoa and mousse. If the quinoa has cooled, put it a few minutes in the oven. Finally ,garnish with some tomatoes, maybe a little shoyu and some celery leaves.
Serve warm

    I like the idea of celery mousse…you can use it in many ways, I mean, you can serve it just as a dip!
