Curry Patties

I could not miss the patties saga!
Last night I cooked a pan of peas, carrots, corn, onion, ginger and a lot of curry! Once cooked, I wasn’t hungry anymore (don’t worry, I had dinner with a sandwich!) and I decided to put it in the fridge. Today I decided to turn the dish in a mixture for patties! I must say that I really liked them! They taste very Indian.

a can of chickpeas, that is 230 gr
a can of corn, 140 gr
4 carrots, not too large
a medium onion
oil and salt as needed
breadcrumbs as needed
2 tablespoons flour 0
2 tablespoons of potato starch

Sauté the carrots, cut into slices or small cubes (as you prefer!), with the onion and then add the chickpeas, corn, curry and ginger and a bit of salt. You decide the amount of spices. Everyone has his own tastes. Let’s say that, in the end, the dish should give off a sweet smell of curry. Let it cool and then blend it. Now add breadcrumbs, a couple of tablespoons of flour and potato starch to compact the mixture, and shape it to form patties. If it is too soft, just add more flour and breadcrumbs. Pass the patties in breadcrumbs, and fry them in hot oil, or bake until golden brown.
With these amounts I obtained 13/14 medium sized patties.
I served them with mixed salad and poured with the lemon juice.

P.S. : These days I’m preparing dishes very yellow because I’m trying to cheer me up and I try to eat very colourful dishes 🙂 !
