Bran Flake Cereal
Recently, due to the extremely hot summer weather, we’re eating cold breakfast cereals more often, and–seeing all the sugar, high fructose corn syrup, additives, and other suspicious ingredients in most packaged cereals–I decided it was probably worth trying to make my own.
This is a really simple recipe. It’s so crunchy and refreshing to eat with ice cold non-dairy milk (almond milk is perfect if you can get it!) and ripe seasonal fruits (peaches, nectarines, strawberries, etc) or add dried raisins, for a homemade raisin bran cereal. You may never go back to expensive store-bought cereal after trying it!
Ingredients:
150g wheat bran
150g whole-wheat flour
40g soy milk powder
1/2 tsp salt
30ml oil
1 tablespoon maple syrup (or other sweetener)
125ml water
Method:
Mix together the dry ingredients in a bowl. Form a well in the center and add oil, maple syrup, and water. Mix thoroughly (with spoon and then by hand) to form a dough. Divide into 2 equal portions and flatten by hand, then use rolling pin to spread as thin as possible between 2 oven paper sheets. Place bottom sheet onto baking pan and bake in pre-heated 170°C oven for 15-20 minutes (checking along the way to make sure it does not burn). Remove from oven, cool completely, and break into bite-size pieces.
Comments:
Store in refrigerator to keep fresh and crispy.

No worry. If you don’t have soymilk powder and wheat bran, you can make wheat flakes with equal parts of whole-wheat flour, water, and a dash of salt. Try experimenting! If you don’t have oven paper, you can grease the pan (I prefer to use as little oil as possible, and the easy clean-up of oven paper).
