Vegetables Tower

Ingredients:
(serves 2)
2 round zucchini
1 aubergine
1 tomato
Concita’s vegan mozzarella
2 green peppers
1 fresh chili pepper
soy sauce
extra virgin olive oil

Method:
Chop zucchini and aubergine into thick slices, line the baking tray with baking pape; place ther the sliced vegetables, brush them with oil and cook on microwave mode for ten minutes per side.
Chop the peppers into cubes and season with olive oil and soy sauce.
In a baking tray, arrange the cooked slices of vegetables, alternating them with vegan mozzarella, finish the towers with tomato at the top. Bake the towers for five minutes in the oven to let the mozzarella melt; if it doesn’t it’s not a problem, if it’s warm that’s fine anyway.
Garnish the plate around the towers with seasoned raw peppers.
Be careful while “building” the towers, try to built them as straight as possible to avoid the Tower of Pisa effect when the mozzarella gets soft. One of them started leaning, I recovered it just last minute!
