Violet Sweet Potato Pie


Here I am, after a long time, proposing something suitable for the climate, which is no longer summery (autumn is coming finally!): a revised American Pie. This is a pie made of american potato (that is sweet, in fact), very spicy, in a pastry shell flavoured with violet. Trying is believing.

-For the pastry:
300 gr of flour
1/2 cake of margarine
80 gr of sugar cane
1/2 packet of yeast
a pinch of salt
tea-leaf violet
-For the filling:
500 gr of boiled sweet potatoes
250 ml of soya milk
60 gr of sugar cane
3 tablespoons of cornstarch
3 tablespoons of vegetable oil
a pinch of salt
1/2 teaspoon of nutmeg
1/2 teaspoon of ginger powder
1/2 teaspoon of cinnamon
1/2 teaspoon of cloves, crushed

For the pastry: Prepare half a cup of violet tea, highly concentrated (the stronger is the tea, the better is the taste of the cake). Mix flour, sugar, baking powder, one teaspoon of tea leaves, salt and margarine in a bowl, then add the tea (preferably not boiling) as necessary to reach the desired consistency (about half a cup, in fact). Wrap the dough with a cling film and put it in the fridge to rest for at least half an hour
For the filling: Blend all ingredients to reach a smooth cream.
Roll out the pastry into a cake tin, prick it and then pour in the potato cream (after having tasted it, I hope! It tastes like chestnuts and is quite addictive). Bake at 180-200 degrees for 50-60 minutes.
Try with: violet tea, of course! Also, rose tea should enhance its perfume, and so should all the flower flavoured teas.
Now, I just have to read all the recipes you have posted in recent months … it will be impossible! 🙂

    I couldn’t live without sweet potatoes 😛 I made a sort of conserve some time ago, it tasted like pumpkin conserve, with cinnamon and nutmeg it was delicious! Never tried violet tea. I don’t prepare cakes very often to be honest, but I’d love to try this!
